Pasta Arrabiata

Impress the one you love with this simple but ever so tasty dish. The perfect vegan Valentine’s supper, and one we think you’ll repeat time and time again. The real love match here is the Nooch on top!

Recipe tip: Serve with a crisp salad and a nice chilled bottle of something fizzy.

 

What you’ll need:

  • 150g pasta (either penne or conchiglie)

  • 1 tablespoon olive oil

  • 2 cloves of garlic, crushed

  • 1 teaspoon crushed chilli flakes

  • 1 x 200g tin of crushed tomatoes

  • 1 tablespoon tomato paste

  • A handful of finely chopped fresh basil

  • Salt & pepper to taste

  • 2 tablespoons Nooch, nutritional yeast, to garnish

  • A sprinkling of basil leaves to garnish

How to do it:

  1. Cook your pasta in a large pan of boiling water for about 15 minutes.

  2. Whilst it is cooking gently saute the garlic in the olive oil for 2 minutes, then add the chilli flakes, tomato paste and crushed tomatoes. Gently bring to a low simmer for 5 minutes.

  3. Season to taste and stir in the chopped basil.

  4. Drain your pasta and stir the sauce into it, then serve in bowls and sprinkle a generous tablespoon of Nooch on top of each bowl. The finishing touch, to make it look extra special, is a few whole basil leaves.

  5. Serve immediately and enjoy.
