Edamame, Pea & Herby Salad

When you love parmesan, but want vegan, our Nooch (known as Engevita® Yeast Flakes) add a mouth-watering umami, cheesy flavour to all your fresh salads. This combination is particularly delicious and full of healthy goodness too.

Recipe tip: You can use tinned, fresh or frozen edamame beans. We have used frozen here. A trick to thaw frozen edamame and peas is to just pour boiling water over them for a few seconds and then drain them. You can also add runner beans or asparagus to this salad when in season.

Edamame, Pea & Herby Salad - Marigold Health Foods
 

What you’ll need:

  • 2 spring onions, finely chopped

  • 1 tbsp rice vinegar (white wine vinegar will do)

  • 1 tbsp fresh lime juice

  • A few drops of Marigold Liquid Aminos (or soya sauce)

  • 200g frozen edamame, thawed

  • 200g frozen peas, thawed

  • Pea shoots or micro leaves, chopped

  • A small bunch of fresh coriander and parsley, chopped

  • 1 tbsp sunflower seeds

  • 2 tbsp of Marigold Engevita Nutritional Yeast Flakes

  • Freshly ground black pepper

How to do it:

  1. Mix all the ingredients, but only half of the Nooch, together and let the mix sit for 30 minutes to slightly marinate.

  2. Serve onto individual plates with a slice of sourdough and sprinkle the remaining Nooch on top with a grinding of black pepper.
