Gazpacho Soup

This gorgeous, timeless summer cold soup uses our famous Marigold Original Bouillon. It’s totally delish and perfect for summer evening suppers.
Recipe tip: Serve with freshly baked garlic bread for maximum effect. This is also delicious garnished with some freshly chopped mint leaves.
What you’ll need:
6 ripe tomatoes, chopped
1 cucumber, peeled and chopped
1 red pepper, chopped
1 small red onion, chopped
2 garlic cloves
250ml tomato juice
2 tbsp olive oil
1 tbsp red wine vinegar
How to do it:
Simply blend all the ingredients until smooth (you many need to add some extra water)
Chill (the soup that is) for at least 2 hours before serving
