Gazpacho Soup

This gorgeous, timeless summer cold soup uses our famous Marigold Original Bouillon. It’s totally delish and perfect for summer evening suppers.

Recipe tip: Serve with freshly baked garlic bread for maximum effect. This is also delicious garnished with some freshly chopped mint leaves.

 

What you’ll need:

  • 6 ripe tomatoes, chopped

  • 1 cucumber, peeled and chopped

  • 1 red pepper, chopped

  • 1 small red onion, chopped

  • 2 garlic cloves

  • 250ml tomato juice

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar

  • 1 tbsp Marigold Health Foods Bouillon

How to do it:

  • Simply blend all the ingredients until smooth (you many need to add some extra water)

  • Chill (the soup that is) for at least 2 hours before serving
