Beetroot & Nooch Loaf

Prep: 15 mins + up to 45 mins to bake

This no-rise loaf is made magical with cooked beetroot and the flavour intensity of Nooch. It’s a really tasty, healthy slice made from oats, seeds and flour.

Recipe tip: Serve with a salad or soup to really fill out your meal.

 

What you’ll need:

  • 120g rolled oats

  • 1 cup coconut milk (plus a little extra if your batter is very dry)

  • 2 medium cooked beetroot, liquidized

  • 30g of our Engevita®, or Nooch

  • 100g wholemeal flour

  • 40g mixed seeds (any combination you prefer)

  • 1 tsp bicarbonate of soda

  • 1 large tsp salt

How to do it:

  1. Turn your oven on to 200C fan. Line a loaf tin with baking parchment.

  2. Mix the oats and coconut milk in a large bowl, then leave to stand for 15 minutes.

  3. Add all the other ingredients and mix well into a thick, oaty batter. At this stage you might want to slightly loosen it with a dash extra of coconut milk.

  4. Bake for 35-45 minutes until golden brown and spongy to the touch. Cool on a rack and enjoy.
