Greekish Fava with Bouillon

We love food inspired by the Mediterranean. Dips and meze dishes are always great for sharing and this fava is a delicious, healthy comfort food. This is not the traditional Greek recipe but it’s a quick and easy version made super tasty by using Marigold Organic Less Salt Bouillon.

What you’ll need:

  • 250g yellow split peas or fava

  • 2 dessert spoons of Marigold Veg Bouillon

  • The juice of 1 lemon

  • 1 tsp dried oregano

  • 3 tsp ground cumin

  • Olive oil and lemon quarters to garnish

How to do it:

  1. Wash the fava well through cold water several times. Put in a pan. Pour 500ml boiling watering over the bouillon powder and stir well. Add to the fava and gently bring to a simmer.

  2. Add the lemon juice, oregano and cumin and simmer until the fava are tender. You will need to add extra water as it cooks through. It needs to be the consistency of a very thick soup.

  3. Once thoroughly cooked, blend in a mixer until smooth. Serve in a sharing dish then drizzle extra virgin olive oil over the top and garnish with some lemon slices.

  4. Enjoy as a dip or as part of a larger meze.
