Gnocchi with Tomato & Chilli Pesto

Serves: 2 people
Prep time: 15 mins, cooking time: 3-5 mins

The simple things in life are often the best, and this quick dish is no exception. Warming from the chilli and flavourful from the nutritional yeast, it’s the perfect comfort food for lunch or dinner.

Recipe tip: Make the pesto ahead and then you can prepare the meal in about 5 minutes!

 

What you’ll need:

  • 1 x 500g bag of fresh Gnocchi

  • 150g sundried tomatoes or semi-dried tomatoes in oil

  • 1 tbsp tomato puree

  • 1 red chilli deseeded and roughly chopped

  • 35g pine nuts

  • 25g nutritional yeast

  • 2 garlic cloves, peeled

  • A handful of parsley leaves

  • 125ml extra virgin olive oil

  • Salt & pepper to taste

How to do it:

  1. Whilst the Gnocchi is cooking – it usually takes 3 to 5 minutes simmering – put all the other ingredients in a liquidizer.

  2. Mix well until nearly, but not quite smooth, adding more oil if you feel it needs it.

  3. Drain the Gnocchi and stir the sauce in well. Serve immediately with a few basil leaves to garnish and a squeeze of lemon juice if you fancy it. Sprinkle further nutritional yeast on top and enjoy.
