Spinach & Pine Nut Pasta

Easy to prepare and full of nutrition, this quick pasta idea is not only delicious but perfect for a mid-week supper.

Recipe tip: Chop the spinach well before you saute it to get the best results.

 

What you’ll need:

  • Approximately 300g of fresh spinach, washed and finely chopped

  • 3 garlic cloves, crushed

  • 2 tbsp of our nutritional yeast, or nooch

  • 2 dessert spoons of pine nuts

  • 2 handfuls of spaghetti or buccatini

  • A few glugs of olive oil

  • Seasoning to taste

How to do it:

  1. Put your pasta on to boil and cook until tender. 

  2. Meanwhile, gently heat the olive oil in a pan and add the garlic, spinach and seasoning. Just cook the spinach lightly, tossing it to cook through, until just tender. Add a couple of ladles full of the pasta water, the nooch and the pine nuts then stir well.

  3. Drain the rest of the pasta off and add it to the spinach. Stir well and try to wind it up a spoon or large fork to serve (check out our Instagram post to see how this is done).

  4. Sprinkle more nooch on top to serve – of course – and enjoy!
