Sweet Potato Mash

Easy peasy, heart warming and just like a big hug in a bowl. Make this for yourself for a quick lunch or a super charged side dish.

Recipe tip: Sweet potatoes are incredibly high in vitamin A, so they are worth to be included in a weekly meal plan.

 

What you’ll need:

  • 2 medium sweet potatoes

  • A big glug of olive oil

  • Few spoons of Engevita

How to do it:

  1. Simply peel two medium sweet potatoes. Boil until soft (about 10 minutes).

  2. Mash with olive oil and a big spoon of our nooch.

  3. Season to taste and serve.

  4. Sprinkle more nooch on top if you fancy, but you’ll love the flavour either way.
